Panela is raw cane sugar in its purest form. It is called "piloncillo" in Mexico and rapadura in other places. This block of unrefined sugar is made by cooking sugar cane down into a syrup, pouring it into molds and then letting it harden into these beautiful golden blocks. Panela can be used in place of sugar or honey in drinks, baking and cooking.
This panela comes from a farm up in the mountains of Chiriqui, Panama where they have been making panela the traditional way for decades.
Panela has a "caramely," deeper, bit earthier flavor than white sugar or even brown sugar. Because of the simple process this sugar cane goes through, it retains the minerals and antioxidants that come from the sugar cane plant!
Panela is an ingredient in drinks like cafe de olla, limonada, guarapo, and agua panela.
You can grate, smash or chop the bars up and use in place of sugar in your baking projects.
I like to use panela to sweeten my teas and fresh limeades. My boys and I will nibble on a piece here and there for a little mineral rich energy boost.
